6 to 12 Halle Pina (Jalapenos) peppers

1 pkg softened cream cheese

1 pkg bacon ( I use the lower sodium kind)



Rinse and take all the seeds out of the peppers then cut them vertically from stem to stern.

Fill with cream cheese and then wrap with bacon and place on a cookie sheet

Place in the oven @350 for 45min to 1hr (the longer you keep them in the less dente they get)

INGREDIENTS 

3 avocados, peeled and pitted

3 green tomatoes

4 fresh tomatillos, husks removed

3 cloves garlic, peeled

2 jalapeno peppers, seeded and halved (optional.... I do like to add 1 or 2- you can always substitute green chiles for a milder sauce)

5 sprigs fresh cilantro

1 1/2 cups sour cream

I prefer adding baking powder and salt but most people only keep all purpose on hand so either way

Wash about 2 cups of pumpkin seeds in a colander and try to remove all the pulp.

Toss them in a bowl with about two tablespoons of melted butter. 

Spread seeds on a cookie sheet and sprinkle with salt. 

Roast for about 45 minutes or until golden brown. Let cool and enjoy! 

Great cooking project for the kids to enjoy after carving their pumpkins!
