No Egg Fluffy Pancakes from scratch (vegan option)
I was hungry for pancakes tonight and had no mix, lol. So, I did what I do best...I did a little search, found a few recipes & then threw one of my own together. They came out fantastic! Nice, light, fluffy and delicious!
(Option to Make Recipe Vegan)
1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon sugar
1 1/2 cups milk (or for a vegan alternative you can use water or a vegan soy milk)
2 tablespoons vegetable oil
1 teaspoon valilla
In a large mixing bowl, combine all dry ingredients. Once fully combined, mix in remaining wet ingredients until combined. Mix until batter is mostly smooth and lump free. If batter is too thick, add water a tablespoon at a time until it reaches desired consistency.
Preheat stove top on med-high setting. Once burner is ready, spray pay with non-stick cooking spray or use a non-stick pan. Pour just enough batter to form a pancake of the desired size. Place pan on burner.
Watch pancake closely, when the center does not look very 'gooey', and the edges are just brown, it's time to flip the pancake. Cook for approximately 2 more minutes.
Serve warm with syrup, butter and/or fruit topping.
**********Note
You can also add fruit to the batter itself. I mashed one ripened banana and added it to the batter. Yummy!
