Homemade Bread or Dinner Rolls (sweet)
Now, first I must say that I am (or at least I've been told) a great cook & baker. I, however, do not usually use a recipe. I will taste something or get a recipe & alter it to suit me. I very rarely "measure" anything. This recipe is an "about" recipe. A good friend taught me to make this when I was about 12 yrs old. This was "her" original recipe. I usually cut the amount of sugar a bit. She used this same recipe for Bread (less sugar) Dinner rolls (less sugar) Cinnamon Rolls or just plain Sweet Rolls.
Bake at 350* Makes about 3 dozen dinner rolls or 3 loaves of bread
5lb Bag of Flour (I use Bleached presifted, you can use whatever your favorite is)
1 Cup of Crisco
4 Cups of Very Warm Water (NOT HOT, as it will kill the yeast)
1 Cake (2 oz.) Yeast (or 3 packs of dry yeast if cakes can not be found)
Pinch of salt
2 Cups of Sugar
1 Stick of melted Butter (or I use I Can't Believe It's Not Butter) Set aside until after baking.
(FOR BREAD OR DINNER ROLLS, I USE ABOUT A 1/2 CUP LESS OF SUGAR)
THIS IS WHAT I DO FOR DINNER ROLLS
Mix yeast & very warm water. Mix all the ingredients together using on;y about half of the flour at first. Add flour until you have a dough consistancy and knead dough until nice & smooth. Not sticky. You will use almost all, if not all of a 5 lb of flour. Knead the dough until it is completely smooth.
Set aside in a bowl & cover with a towel. The warmer the room it's in, the faster it will raise. When the dough is about triple in size, punch it down & let it raise again. Again, after it has raised about three times it's size. This time, punch it down and tare of pieces about the size of golf balls. Place on greased pans. I like to use pie pans, as they look really nice :-) But you can use cookie sheets, baking sheets. Whatever is your usual is.
Cover & let raise until they are at least double in size this time, but they do not have to be triple. The more they raise, the more light & airy they are (also the less time they take to bake). Baking time is usually 15-30 minutes depending on size. Until a nice golden brown appearance.
Remove from the oven. While hot...Brush the tops of the rolls with the melted butter. Allow to cool and place in plastic bags or containers. To bring the back to "out of the over fresh & warm", just microwave for 15-30 seconds.

Instead of making Dinner rolls, you can break raw dough into three even pieces & place in loaf pans. Allow to raise at least twice in size. Again, the more they raise, the more light & fluffy the bread is.

Also, for Cinnamon Rolls....Punch down the final time & roll out the dough. Spread on your favorite filling, roll & slice whatever thickness you'd like to have the rolls. MY suggestion is about 1 1/2 - 2 inchs in thickness. (for large cinnamon rolls) Allow to raise again as suggested above (at least twice in size). Bake. Remove from oven when golden brown & glaze.
Cinnamon Roll Filling & Glazes can be found anywhere online or use your own favorite.

Do you think it would be just as good if I use wheat flour? My husband doesn't eat white flour any more.

OMG Fysty this sounds SO good ! I am uhhhhh "challenged " ( lol ) when it comes to know how much "kneading " is enough or too much....... is that like being "needy" ?????? lol
But................. this winter I AM going to make this instead of my infamous ( lmao homemade ) Bridgeford Rolls :-)

My daughter & I have decided to make these sweet rolls. We are starting them tonight & due to the cooler weather, they may be ready to bake...tomorrow night. She will be doing most of the "labor" (but that's fine with me.
I always keot the recipe on my fridge but of course, looking for it...it seemed to be the ONLY missing item from on the fridge! I told her...well, I am pretty sure I "remember" all of the ingredients. Then I came here to cheat & refresh my memory! Damn, I must be getting old. Haven't made them in a long, long time. I'll let you know how they come out!
