Fried Green Tomatoes

Slice the green tomatoes really thin.

Lay them out, sprinkle salt and black pepper. I like cayenne pepper on mine as well. Let them sit while preparing to fry.

Heat a little olive or veggie oil in your pan.

Pour a little flour or cornmeal on a plate ( I prefer whole wheat flour or cornmeal)

Dredge the green tomato through the flour, both sides, and place in hot oil

They don't take long, especially if sliced very thin

When the first side is browned, turn carefully and brown the other side. About 2-3 minutes each side. Yum!

Piper, I mix the flour and corn meal together for the coating on my green tomatoes, fried squash and also okra.

Your tomatoes look good enough to eat, do you have any corn bread to go along with them?

I sure do Mama! Come on over!

Some recipes call for an eggwash, milk....I've never done that. Why waste eggs and milk when you can use that for gravy and fried eggs, right?
