Portobello Mushroom Sandwiches

Have a vegetarian in the family? These are a great alternative to a burger patty, low cal and easy to fix. Easy on the budget, too. We love them. I made them last night with some steamed red potatoes.



Clean your mushrooms with a damp paper towel. Gently remove the stem and scrape the gills out of the mushroom with a spoon.




Preheat oven to 425. Place mushrooms, smooth side up, on a baking sheet. Drizzle olive oil, salt and pepper. Some recipes call for vinegar as well, but I don't like it. Let them sit while you prepare everything else.




Saute sliced onions, peppers, garlic and pepper in olive oil. Red and yellow peppers make it even tastier and so pretty, but they can be expensive.



Roast the mushrooms in the oven for about 20 minutes, or grill for about 10 minutes.
Toast your wheat hamburger buns, place mushroom on the bun and top with the sauteed veggies.

Piper, I'm not a fan of mushrooms, so I can't say much about them, but man, oh, man, those peppers and onions look delish! Now all we need (or maybe not) are some of Lottie's homemade sausages. Very Happy
