Sauteed Frozen Green Beans

Post by Piper on Sat Jan 29, 2011 8:06 pm

Ever wonder what to do with a frozen bag of green beans from the store other than throwing them in a veggie soup? Have you ever tried blanching, steaming or microwaving them? They don't turn out very tasty that way. They are frozen fresh and here's a quick and easy way to experience them in all their glory! Frozen green beans are inexpensive and full of nutrients.

Sauteed Frozen Green Beans

* 1 lb bag of frozen green beans, chopped or whole
* 1 tbs or more of olive oil (vegetable, peanut or canola – anything good for sauteing)
* 1/2 tsp salt, black pepper and crushed red pepper to taste
* Small handful or so of Panko bread crumbs

1. Heat the oil in a 12″ non-stick over high heat.
2. When the oil begins to shimmer (~3 minutes), add the frozen beans.
3. Cook the beans, stirring every 30 seconds, until all of the ice has melted and most of the water in the pan has evaporated (~ 5 minutes or more).

4. Add the salt, pepper, pinch of crushed red pepper, bread crumbs and continue to saute until about half the beans have started to brown.

5. Remove the pan from heat and serve….

You can also prepare the frozen beans in the oven with all of the above ingredients. Mix in a bowl, spread on baking sheet and roast in the oven at about 450 for approximately 30 to 40 minutes until tender.

~Enjoy~!

Oh and BTW my dearest sweetest Piper Fairy Girl, I believe I will choose the second option. The one described above. Sounds easier and more foolproof. Cool bounce roflao

Yes, that's my red cookware. And the stovetop method is just as easy as the oven method.....if not easier... guitar

Yummy! I can't wait to try this recipe! I imagine one could use onion or garlic salt in place of the salt-just use it to taste like the other seasonings.

I, too, admire your skillet~

Thanks Sherry! It's all about your taste, I totally agree! It's just frozen green beans in a bag have a bad rap unless they are done right, and it doesn't take much time to fix em right!
It's quick and easy.......

Girls, I have never eaten a 'store bought' canned or frozen green bean. My mother will only eat "Little Potato Patch" or "Half Runners". We always get a couple of bushels every summer and she cans them for the winter time.

Alas, mother is 87 years old and not able to do them this year, so since I am moving her in with me, she will have to teach me how to can them. I always pre-cook my beans and freeze them, so I may not have to can them. I am afraid of the pressure canner and I'm sure I will never use it.

My grandmother had a funny saying as I was growing up. She always had a big garden and had lots of green beans, tomatoes, corn, squash, okra, etc. Someone asked her one time what she did with all those veggies and she said "We eat what we can, and what we can't, we can."

Hope you understand that. Most of you will, but I doubt if eva will get it.

I get it. I buy canned cuz it's convenient, and also because I suck at gardening, plus don't have time for it, at least not at this point in my life. Kids are really picky about veggies, so I have to "hide" theirs sometimes in other foods or soups. I love fresh veggies, straight from the garden, yum!

LOL, sitemama! I'm skeered of the pressure canner, too! I've seen many of those valves hit the ceiling! I freeze any fruits or veggies calling for that type canner. Unfortunately, any beans I grow end up getting bug infested, and my dog would eat them off the vine.

Sherry, we don't have a garden ourselves. We hit the Farmer's Market and purchase what we want. It is so much fun to go there as the vendors sell the best pickles, beets, jellies, home baked breads and cakes, in addition to the fresh veggies and fruits.

The one in Hickory is there on Wednesdays from noon till 5pm, and on Saturdays from 8am till 1pm.

One lady sells ice berg pickles and I usually buy every jar she has.

This is where I saw my first dark purple or black tomatoes. They have a great taste.

Mmmm...sitemama! Yes, we are going to try the Farmers Market this year. I love growing tomatoes but need more than I have room for to can my tomato sauce for the winter. To get from season to season I need at least 100 jars-no kidding.

It'd be nice to buy the pickles, too, from the Market for my Bread and Butters.

{sigh} is it summer yet?

Sherry, I believe you about the 100 + jars! I used to have a huge garden at my old house. Mama, I only grew half runner beans! I would lay down a bedsheet in the living room floor, pour out the bushels of half runners and spend a day or so breaking beans. I canned them by the sheet load...LOL!

I was always afraid of the pressure canner as well. There is nothing sweeter than opening a jar of home canned beans in the middle of the winter. I would give some away at Thanksgiving and Christmas to family and friends, they were always so very appreciative.

Piper, "by the sheets"-lol!

This reminds me of a friend who made pickled green beans to use in her martinis! She'd also add pickled banana peppers and other veggies. We would tease her about those "salad" martinis.

I used to pick beans at a greenhouse in the summers as a kid. Oh my! It seemed like the hottest day of summer was THE day to pick rows and rows of green beans!

When I was a kid, my parents grew green beans one or two summers. (They grew different stuff each summer.) I remember munching on some before they were even cooked. I love fresh, raw veggies.
