Baked Oatmeal

A great twist on your morning oatmeal. Makes plenty for your family and it's an easy, healthy dish to make for overnight guests.

Baked Oatmeal





Ingredients:

* 3 cups oatmeal
* 3/4 cup brown sugar
* 1/2 cup butter (you can substitute applesauce for 1/4 c. of the butter if you want)
* 2 eggs
* 2 cups milk
* 2 teaspoons baking powder
* 1 teaspoon salt
* Cinnamon

Optional Add-Ins: raisins, dried cranberries, blueberries, apples, bananas, walnuts, peaches, etc. I use frozen blueberries, unthawed.

Optional Toppings: warm milk, cool whip, ice cream, etc

Preparation:

Preheat oven to 375 degrees Farenheit.

Mix all ingredients together and pour into 13 x 9 inch buttered pan.

Bake at 375 degrees for 25 - 30 minutes

Spoon into a bowl and add a topping of your choice, great with a little warm milk

My mom made it sometimes when we were little and she would warm a little can of that sweetened condensed milk, Eagle Brand, and pour a bit over ours. It was heaven, a real treat. We rarely had fruit in ours, sometimes apples or raisins.

I recently acquired my mom's box of handwritten recipes, she has a real sweet tooth. I'm going to make a little book for my family. Her oatmeal cookie recipe was in there, and then I remembered her making this on cold winter mornings and I had completely forgot about it. It always reminded me of warm oatmeal cookies right out of the oven. So I searched and found many recipes on line, because hers wasn't in the little box, but this one pretty much tastes just like hers. Her homemade chocolate fudge and peanut butter fudge recipe wasn't in there either, it was in her head and her fudge was a long time family favorite, back to her teenage days. I'm so very sorry I couldn't get those candy recipes from her before the dementia took over.

Another one I remember her making was a powdered sugar peanut butter candy, she would roll it up in a log and slice then put it in the fridge to get cold. I remember sneaking pieces of it. If anyone has ever heard of that I would love to see your recipe. Her fried chicken, gravy and chicken & dumplins are in my head, guess I should be writing those down! I realize we all took for granted that mom would always be the candy maker, never realizing that one day she wouldn't be able to remember how to do it. Love you Mom.

This sounds and looks yummy! Will definitely have to try it.
