Spaghetti w/ Red Clam Sauce

Post by BillB on Wed Jun 01, 2011 9:19 am

I know everyone loves spaghetti with white clam sauce, thats what my wife said until she tried this. I got this Idea from a Chef in Venice when he served us steamed clams in a olive oil and tomato base sauce. In order to infuse more flavor, I made this more of a Italian tomato seafood sauce. This sauce is full of flavor with a touch of heat from some dried peppers and crushed red peppers. The Idea is from Venice, the spices are from a farmers market in Rome, the love comes from you.............I don't think I ever made a good dish with out caring..........
Reduce

Keep on reducing

Your there

Put in the clams, turn up the heat

Looking good all the clams are open and ready for the pasta

Add the spaghetti right from the pasta water, toss with the sauce and clams,
serve with crusty bread, or toasted garlic bread

The sauce is made with tomatoes, garlic, Italian spices, dried red peper, crushed pepper, clam juice, lemon juice, onions...................Enjoy.................Chef Bill
