Crispy Baked Tilapia
Preheat oven to 400
Place tilapia filets on well oiled baking sheet or dish. Sprinkle with salt/pepper. Sprinkle bread crumbs on top of fish filets, skin down, then more seasoning of choice ~ I prefer a little cayenne and then smoked paprika.
Bake for about 20 minutes or until fish is crispy outside and flaky.
On another baking pan, prepare other veggies with olive oil and seasonings. Roast those at the same time as the tilapia. Sprinkle with parmesan cheese when veggies come out of the oven.
Very easy, both done at the same time. In this picture, I sprinkled parmesan cheese over the asparagus and grape tomatoes once removed from the oven served with a small red baked tater with a touch of sour cream ......YUM!~

That's even easier and healthier than my recipe! And looks yummy!
Hubby likes Tilapia better than Catfish. I like them both but I do love my Catfish when its fresh caught.
I turn the oven on to 350 and after pat drying the fish I spray olive oil on them then coat them with a mixture of bread crumbs and parmesan cheese with a bit of ground black pepper. I place them on an oiled baking sheet and bake for about 15 to 20 minutes. Its not crispy though.
I'm a lazy cook so I think I'll try your recipe next time I cook Tilapia (or cat) for dinner. We had my recipe for Tilapia tonight with oven fried zucchini slices.
