Beets with Orange Sauce

This recipe is from my great aunt. She was an awesome cook and would use to serve this whenever she served leg of lamb.

Beets with Orange Sauce

* 1 1/4 cups brown sugar
* 2 Tablespoons corn starch
* 1 small can frozen orange juice (Minute Maid) - thawed
* 3/4 cup cider vinegar
* 1 large can of small whole beets - drained
* 1 Tablespoon butter (not margerine)

Blend sugar and corn starch. Stir in thawed orange juice, vinegar and water.

Bring to boil, stirring constantly. Add beets, butter and simmer until beets are heated. Stir occassionaly.

Serves: 6
Can be refrigerated for up to a week in an air tight container.

I don't do beets, but I have beet lovers in my family that would most likely love beets prepared this way. Thanks Ann!

I don't like beets, Piper, but I love beets fixed this way. I could eat them all . . . forget about hubby!

I have not made this in a while. I will have to make it soon.
