Banana Ice Cream
Here is a really easy recipe for Banana Ice Cream that Joy Bauer sent me in her newsletter~
4 large, partly frozen bananas
Puree in a food processor or blender. Put in a container and freeze at least a couple of hours before serving.
Variations: Add 2 tablespoons of peanut butter before pureeing.
OR~ Add chocolate chips after pureeing, mixing well.
I was going to go through the whole process of slicing the bananas and freezing the slices on a plate and putting in freezer bags. I was going to do this so I could have the slices for my oatmeal in the morning. Well, I tried this ice cream in the oatmeal before cooking in the nuker-a little bit will do-and it tasted great, like the bananas and cream instant variety when you add a bit of skim milk. I'm not a big nanner eater but I needed more potassium in my diet so this was a perfect solution.
