Moist Zucchini Cake

Moist Zucchini Cake
This is my favorite cake recipe and it can be made into a chocolate cake if you like.
Zucchini (Chocolate) Cake
Cream together in large bowl:
2 cups sugar
1 cup oil
Add, one at a time and beating in after each one:
3 eggs
Blend in:
2 t. vanilla extract
Set aside.
In another large bowl combine:
2 cups flour
1 t. baking soda
1/2 t. baking powder
1 t. salt
2 t. cinnamon
(1/2-3/4 unsweetened cocoa powder, if making the chocolate cake)
3 cups freshly shredded zucchini (I use the shredded zucchini I froze for winter use and slightly drain it)
3/4-1 cup chopped walnuts, optional
Add the dry ingredients to the creamed sugar mixture alternately with the shredded zucchini. Fold in the walnuts, if using. Batter may be thin, no worries!
Grease and flour the cake pan(s). Pour in batter. Bake @ 350 degrees for 50-60 minutes. Toothpick inserted in center should come out clean. Cool in pan(s). Frost with favorite frosting.
My notes: I ice my cake most of the time with a powdered sugar and milk icing that has 1/2 t. vanilla extract added. I omit the salt from the recipe and it comes out fine. Sea salt can be used, too. I use canola oil sometimes. When I'm not making the chocolate version of this cake I will use apple pie spice in place of the cinnamon. Yummy!

Sherry, thanks for posting this. I am just now catching up on things here at RC and I had looked forward to seeing this recipe. I have shredded zukes in the freezer just waiting to be turned into a cake........yum!

I split this recipe in half for just my hubs and me (I use two eggs). So moist!
